Fresh Strawberry Sauce
This is an all-time favourite sauce to serve with European-Style Crepes. It is delicious, super-quick to make and looks spectacular if you want to impress guests. You can also serve this sauce on scoops of soy ice-cream.
- 750 g fresh, ripe strawberries, hulled and thinly sliced
- ¼ cup caster sugar
- Place the strawberries in a pan and sprinkle with the caster sugar. Heat on a moderate flame until the sugar begins to melt and caramelise and the strawberries begin to soften and release their juice.
- Add ¼ cup of water to the strawberries and continue cooking for a further few minutes until the strawberries are soft and a sauce has formed.
Makes sauce for 8 crepes
